Old-Fashioned Pancakes, or Crêpes à l'ancienne, is a light and fluffy pancake, perfect for breakfast or dessert, topped with maple syrup.

The Dry

all-purpose flour

baking powder

Instructions
The Mix
▢
In a mixing bowl, combine the
250 g all-purpose flour
,
10 g baking powder
,
10 g sugar
and
1/4 tsp. salt
.

In a separate bowl, whisk together the
450 ml whole milk
,
2 eggs
and
2 tsp. vanilla extract
until well blended.
▢
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing; a few lumps are okay.
The Cooking
▢
Heat a bit of
vegetable oil
in a large skillet over medium heat. Pour approximately 80 ml (1/3 cup) of batter for each crêpe into the skillet.

Cook for
1 to 2 minutes
, or until the edges appear set and the bottom is lightly golden. Carefully flip the crêpe and cook for another
1 to 2 minutes
.

Repeat this process with the remaining batter, adding more oil to the skillet as needed.
