Gather the ingredients. In a large mixing bowl, mix the 500 g Pressed Cottage cheese, 60 g semolina flour, 1 egg, 50 g sugar and 1/2 tsp. salt.Chef's Tip: If your pressed cottage cheese has excess liquid, place it on a plate, cover with another plate, and add a weight on top for a few minutes to drain.
Mix until well combined. Use your hands. Let the mixture rest for at least 15 minutes to allow the semolina to absorb the excess moisture.
The Shaping
Spread the 50 g semolina flour for coating onto a large cutting board or plate. With your hands, take a portion of the mixture and roll it into small 1.5-inch balls.
Gently flatten the ball into a 2-inch patty and lightly coat both sides of the patty in the semolina flour.
The Pan-Frying
Heat the 2 Tbsp. vegetable oil in a large frying pan over medium-high heat. Once the oil is shimmering, reduce the heat to medium-low and carefully place the syrniki in the pan, ensuring not to overcrowd it.
Cook for about 3-5 minutes per side, until a golden-brown crust forms.
The Serving
Serve and enjoy my Mom's Syrniki [Мамины сырники] warm. Top with a dollop of 14% sour cream and a sprinkle of sugar to taste. They also pair well with tea or coffee.
