Ingredients
The Mix
- 500 g Pressed Cottage Cheese Not regular cottage cheese
- 60 g semolina Flour
- 1 egg
- 3 Tbsp. Sugar
- 1/2 tsp. salt
The Sear
- semolina Flour For Coating
- 2 Tbsp. vegetable oil
The Toppings
- 14% sour cream to taste
- Sugar to taste

Instructions
The Mixing
- Remove the excess liquid from the 500 g Pressed Cottage Cheese with a weight and a cutting board or a plate for a few minutes.
- In a large mixing bowl, mix the 500 g Pressed Cottage Cheese, 60 g semolina Flour, 1 egg, 3 Tbsp. Sugar and 1/2 tsp. salt. IMPORTANT to let it rest for at least 15 minutes so the Semolina Flour absorbs the liquids.
The Giving Shape
- On a large cutting board or tabletop, sprinkle some semolina Flour to prevent sticking and place near your workstation a bowl of hot water. Dip your finger tips and make the mix into small 1.5 inch balls and hand press into 2 inch patties. You should be able to make around 12 - 16 patties. Turn the patties around to cover both sides in semolina Flour. Sprinkle more Semolina if needed.
The Pan Frying
- Place a frying pan on high heat and add the 2 Tbsp. vegetable oil. Once the Olive Oil starts to smoke, turn the heat down to low-medium and place the patties on it.
- Turn the patties after 5 min. Keep them for another 5 min or until you see a golden yellow searing.
