Preheat your oven to 350 °F (180 °C). Chop 300 g Medjool dates.
In a saucepan, combine the chopped 300 g Medjool dates, 240 ml water, 45 g brown sugar, and 1 tsp. vanilla extract.
Bring to a boil, then reduce the heat and let it simmer for 12 to 15 minutes, stirring occasionally, until you achieve a compote-like texture. Remove from heat and let cool slightly.
The Squares
In a large bowl, mix together the 140 g all-purpose flour, 1/4 tsp. baking soda, 200 g brown sugar, 200 g rolled oats, 200 g unsalted butter, and 1/4 tsp. salt until you obtain a crumbly mixture.
The Date Squares
Line a 8 inch square baking pan with parchment paper. Press half of the oat mixture into the bottom of the prepared pan to form an even layer.
Spread the date filling over the oat layer, then top with the remaining oat mixture, pressing down slightly to compact it.
Then top with the remaining oat mixture, pressing down slightly to compact it.
Place in the preheated oven and bake for 25 to 30 minutes, or until lightly browned.
Remove from the oven and let cool in the pan for about 10 minutes. Once cooled, cut the squares into 16 pieces (4x4).
