The Date
- 300 g Medjool dates chopped
- 240 ml water
- 45 g brown sugar
- 1 tsp. vanilla extract
The Squares
- 140 g all-purpose flour
- 1/4 tsp. baking soda
- 200 g brown sugar
- 200 g rolled oats
- 200 g unsalted butter at room temperature
- 1/4 tsp. salt or to taste

Instructions
The Date
- Preheat your oven to 350 °F (180 °C). Chop 300 g Medjool dates.
- In a saucepan, combine the chopped 300 g Medjool dates, 240 ml water, 45 g brown sugar, and 1 tsp. vanilla extract.
- Bring to a boil, then reduce the heat and let it simmer for 12 to 15 minutes, stirring occasionally, until you achieve a compote-like texture. Remove from heat and let cool slightly.
The Squares
- In a large bowl, mix together the 140 g all-purpose flour, 1/4 tsp. baking soda, 200 g brown sugar, 200 g rolled oats, 200 g unsalted butter, and 1/4 tsp. salt until you obtain a crumbly mixture.
The Date Squares
- Line a 8 inch square baking pan with parchment paper. Press half of the oat mixture into the bottom of the prepared pan to form an even layer.
- Spread the date filling over the oat layer, then top with the remaining oat mixture, pressing down slightly to compact it.

- Place in the preheated oven and bake for 25 to 30 minutes, or until lightly browned.
- Remove from the oven and let cool in the pan for about 10 minutes. Once cooled, cut the squares into 16 pieces (4x4).
