The Dry
- 320 g all-purpose flour
- 160 g sugar
- 80 g almond flour
- 1/4 tsp. salt
- 80 g roasted black sesame seeds
The Wet
- 240 g unsalted butter at room temperature
- 2 egg yolks

Instructions
The Dough
- Gather the ingredients. In a large mixing bowl, combine 320 g all-purpose flour, 240 g unsalted butter, 160 g sugar and 1/4 tsp. salt Mix all the ingredients using a hand mixer to help combine the butter into the dry ingredients.
- Add 80 g roasted black sesame seeds and 2 egg yolks into the mixing bowl and mix again.
- Mix again until you create a ball.
- Put the dough on your work surface. Form it into a ball and divide into 2 equal portions.
- Roll each portion into a log approximately 2 inches (5 cm) in diameter. Wrap the logs tightly in plastic wrap and refrigerate until firm, for at least 1 hour.
The Baking
- Preheat the oven to 350°F (175°C). Remove the plastic wrap and cut the dough into discs about 1 cm thick.
- Place them on a baking sheet lined with parchment paper.
- Bake for about 20 minutes or until lightly browned around the edges.

I own a few birds and had quite a time restraining them as I cooked this dish. They went WILD for the sesame seeds and I refuse to keep them caged. They got their little footprints all over the dough and once it was finished they tore it apart and left me only the crumbs! But the crumbs were delicious! Very crispy and crunchy!
Next I am going to tackle a dish that hopefully has no seeds or grains in it, as my birds will go absolutely mad if I attempt such a thing! I don’t mind though, anything for my darling babies!
