The Blueberry Filling

  • 500 g blueberries fresh or frozen
  • 25 g sugar
  • 12 g cornstarch
  • 1 lemon zest and juice

The Mixing

  1. Gather your ingredients and preheat the oven to 375°F (190°C). In a large mixing bowl, toss 500 g blueberries (wash if fresh first), with 25 g sugar and 12 g cornstarch. Zest and squeeze the juice of 1 lemon.

  2. In another mixing bowl, using a spatula, combine the 200 g brown sugar, 150 g rolled oats, 120 g unsalted butter, 60 g all-purpose flour, 1/2 tsp. salt and 1/2 tsp. ground cinnamon until crumbled.

The Baking

  1. Butter a baking pan or dish. I use a round baking pan with some parchment paper.

  2. First spread half of the topping mixture.

  3. Then spread the blueberries mix.

  4. Sprinkle the second half of the topping mixture evenly over the blueberries in the baking dish.

  5. Bake 35-40 minutes at 375°F or until the fruit filling is hot and bubbly and the topping is golden brown.

  6. Let the crisp cool on a wire rack for at least 60 minutes before serving.

    This is good, but I don’t understand why we always have to try different things. A good old fashioned apple crisp would do the trick, why must we change to berries? I guess that’s just the way it is these days, always having to be different. Nevertheless, my family loved it, especially my daughter. Blueberries are her favorite. I’m glad there is a recipe out there that seems to have been made just for her. Thanks chef!

    Very good, but we NEED more berries in this!

    Just a few more and it would have been perfect!

    I would have added just a few more containers, no more than four, no less than three. That might have done it. That could’ve been the winning combination.

    I feel really bad because it just needed a few more berries and it would have been a five star recipe. Just a few more berries!

    It didn’t even need that many, just a few more! It’s a shame!

    I’m a berry maniac so I’m really stingy about these sorts of things, sorry. You’ve got to go all out on the berries whenever you make these sorts of treats.

    In short, the recipe is tasty, just needs a few more berries, not too many, just a few.

      Burt this is the 3rd review with the same request!!! haha You got to slow down buddy! For the Crisp, if you want more berries, just double the recipe as a whole!
